Today is one of those days when I don’t know what to cook for lunch. I opened my freezer and there I saw chicken breast and frozen sweet peas so it gave me an instant idea what to cook. Fortunately, I have a can of button mushrooms but I got no all purpose cream or cream of mushroom but I know what to substitute for it.

Ingredients: The measurements are just approximates bec. most of the times I don’t really measure when cooking, ok

1 tbsp. butter
1 tbsp. cooking oil
1 onion
2-3 cloves of garlic
1 can of button mushrooms cut into pcs.
1 carrot – cut into strips
1 chicken breast – cut into strip
about 1/2 cup of sweet peas
salt, pepper,
about 1/2 cup of water
about 1/2 cup of evaporated milk –(you can also use all purpose cream or cream of mushroom soup) Note: if you use cream of mushroom, i think you don;t need cornstarch anymore because this is already thick)
cornstarch dissolve in water

Procedure:
1. Put cooking oil 1st so that butter will not burn, butter then saute garlic, onion.
2. Add the chicken, cook until it changed color
3. Add the veggies. Season with salt and pepper.
4. Add water and the milk. Cover and simmer
5. Add the cornstarch until thick.
6. Adjust seasoning according to your taste. Serve hot! Yum!

Here’s another quick and tasty recipe that I cooked few weeks ago. My friend posted a photo at her IG acct. the dish with mushroom that they ate in her fave restaurant and I drooled over it so I decided to cook this Beef with Mushroom in Oyster Sauce.

Ingredients:

1/2 kilo or sirloin beef cut into strips
1 can button mushrooms
1 onion
2- 3 cloves garlic
1 carrots cut into strips
approximately 1/2 c water
3-4 Tbsp oyster sauce
pepper

Directions:
1. Saute garlic, onion. Add the beef
2. Add carrots, mushroom. then add water. Simmer till tender
3. . Add the oyster sauce until cooked

So easy!

I’m fervently wishing that we have a nice home theater system with dvd at home while we are watching our fave movie tonight. Though we already have  a big LCD TV and a DVD in our living room, I guess nothing beats the one with HD and surround sounds.

Anyway, after finishing the movie, my SIL and I went straight to the table to plan our menu for Nov. 1 and for the whole week. Again, we had a tough time to decide but managed to plan the menus but we still need to re-think once again and make some changes. Tomorrow, SIL is heading to the market and it looks like that we are over budgeted simply because 3 of my college niece and nephews are staying at our home for the long weekend.

How’d I wish my brother’s motorcycle has a zumo 665 motorcycle gps so he won’t get lost when I ask him to run errands.  One time, I asked him to buy me some pastries at one of the bakeshop, he mistakenly took a wrong road that led him to be in limbo..lol

I hope next time when I ask him to buy some burgers at the Burger King, Smart Araneta branch he’d not say he’s not say he is lost for Araneta branch is way too big to be missed..lol

Aside from that, new restaurants are opening just in time for the season. We all know that during the holidays friends and families gather together for lunch, dinner or coffee to bond and share things.
