Chicken Breast with Mushrooms in Creamy Sauce Recipe
Today is one of those days when I don’t know what to cook for lunch. I opened my freezer and there I saw chicken breast and frozen sweet peas so it gave me an instant idea what to cook. Fortunately, I have a can of button mushrooms but I got no all purpose cream or cream of mushroom but I know what to substitute for it.
Ingredients: The measurements are just approximates bec. most of the times I don’t really measure when cooking, ok
1 tbsp. butter
1 tbsp. cooking oil
1 onion
2-3 cloves of garlic
1 can of button mushrooms cut into pcs.
1 carrot – cut into strips
1 chicken breast – cut into strip
about 1/2 cup of sweet peas
salt, pepper,
about 1/2 cup of water
about 1/2 cup of evaporated milk –(you can also use all purpose cream or cream of mushroom soup) Note: if you use cream of mushroom, i think you don;t need cornstarch anymore because this is already thick)
cornstarch dissolve in water
Procedure:
1. Put cooking oil 1st so that butter will not burn, butter then saute garlic, onion.
2. Add the chicken, cook until it changed color
3. Add the veggies. Season with salt and pepper.
4. Add water and the milk. Cover and simmer
5. Add the cornstarch until thick.
6. Adjust seasoning according to your taste. Serve hot! Yum!
Tinolang Manok Recipe
It’s been raining lately so sipping a hot soup for lunch or dinner is so very comforting. Tinolang Manok is very easy to cook and eventhough it’s not my favorite, I also need so soup dish on my diet. In fact, this is very nutritious as well. Here’s the TINOLANG MANOK recipe that I will share.
Ingredients:
chicken, garlic, onions
sili leaves, papaya, sili, and ginger
salt and pepper, water
How to Cook:
1. Saute the garlic, onion, ginger and put the chicken
2. Add a bit of water, add the papaya and let it simmer until the papaya and chicken is cooked
3. Add seasoning of salt and pepper or PATIS if you like
4. Put the sili leaves for a minute or two then serve hot.
It’s just fast and easy.

Chicken Caldereta Recipe
Chicken caldereta is one of my favorite dish and my favorite to cook. There are so many ways to cook this dish but I want mine to be “saucy” and I don’t like putting chicken liver or liver spread like what others are putting.
Here is my own version:
Ingredients :actually I don’t really measure so these are just estimates. Adjust according to taste.
~ 2 chicken breasts
~ 2-3 pcs. potatoes
~ 1-2 pcs. carrots
~ 1 pc. red or green bell pepper
~ 2-3 cloves garlic
~ 1 onions
~ 250g. Del Monte Orig. style Tomato sauce in terta pack
~ 2 -3 tbsp. pickle relish
~ peppercorns and pepper
~patis (fish sauce)
~ sugar
~salt
~water
Procedure:
Saute onion, garlic. Put the chicken, cook for few minutes. Add carrots, potatoes and green bell pepper.
Add peppercorns.Add enough water. Pour in tomato sauce and pickle relish.
Season with salt or patis, pepper and sugar
Cover until veggies are cooked.
~to make my sauce thick, I mash some carrots and potatoes and pour it in.
Cook for several minutes until chicken is done.
