Chicken Breast with Mushrooms in Creamy Sauce Recipe
Today is one of those days when I don’t know what to cook for lunch. I opened my freezer and there I saw chicken breast and frozen sweet peas so it gave me an instant idea what to cook. Fortunately, I have a can of button mushrooms but I got no all purpose cream or cream of mushroom but I know what to substitute for it.
Ingredients: The measurements are just approximates bec. most of the times I don’t really measure when cooking, ok
1 tbsp. butter
1 tbsp. cooking oil
1 onion
2-3 cloves of garlic
1 can of button mushrooms cut into pcs.
1 carrot – cut into strips
1 chicken breast – cut into strip
about 1/2 cup of sweet peas
salt, pepper,
about 1/2 cup of water
about 1/2 cup of evaporated milk –(you can also use all purpose cream or cream of mushroom soup) Note: if you use cream of mushroom, i think you don;t need cornstarch anymore because this is already thick)
cornstarch dissolve in water
Procedure:
1. Put cooking oil 1st so that butter will not burn, butter then saute garlic, onion.
2. Add the chicken, cook until it changed color
3. Add the veggies. Season with salt and pepper.
4. Add water and the milk. Cover and simmer
5. Add the cornstarch until thick.
6. Adjust seasoning according to your taste. Serve hot! Yum!
Racks Southern Fried Chicken
I love Racks’ baby back ribs already and I think this Southern Fried chicken tastes also good. I have to try this one time when I go out as I also love fried chicken so much. Racks is offering this chicken with a twist because when you order this it comes with homemade biscuits and honey. Whole chicken is P520, Half is P300. Now I’m craving for a chicken .. yay!
Just right in time, this weekend I’ll be going out at the mall to find dakine backpacks for my nephew and might try this chicken for lunch. Ahhhh can’t wait.
KFC Chili Lime Chicken

One of my favorite chicken aside from Max’s fried chicken is none other than KFC (Kentucky Fried Chicken).Their chicken is finger lickin’ good and good at the last bite. Ahhh now I’m craving for their chicken! I’m a fried chicken lover and with the launch of KFC’s new Chili Lime Chicken, now I have every reason to go out and try this one time. It was just launched in public on Oct. 13. KFC Chili Lime Chicken is marinated in their secret and special spices and covered with their breading. It was then deep-fried to perfection with the chili lime flavor infused in it. I guess I have to try this over the weekend when I’m going to look for the 108r00727 solid ink for my bro’s printer. I’ll then check if the burst of chili and lime in this new chicken flavor from KFC will satisfy my chicken cravings.
BBQ Lunch
Wow, It’s August already and I can’t believe it!! I can see Christmas down the road yay!
Anyway, it’s Sunday and I promised my family that I will treat them a good lunch today since my work is pretty good these days and blessings are keep pouring in. To save us a little, I just give money to my bro and SIL and told them to buy everything that is needed for the lunch today.

We had a very sumptuous lunch and just in case you didn’t know, our family loves barbeque! We had BBQ chicken wings and tilapia plus SIL cooked pork nilaga (pork with soup). For dessert we had Red Ribbon’s Marjolein cake.
Chicken Caldereta Recipe
Chicken caldereta is one of my favorite dish and my favorite to cook. There are so many ways to cook this dish but I want mine to be “saucy” and I don’t like putting chicken liver or liver spread like what others are putting.
Here is my own version:
Ingredients :actually I don’t really measure so these are just estimates. Adjust according to taste.
~ 2 chicken breasts
~ 2-3 pcs. potatoes
~ 1-2 pcs. carrots
~ 1 pc. red or green bell pepper
~ 2-3 cloves garlic
~ 1 onions
~ 250g. Del Monte Orig. style Tomato sauce in terta pack
~ 2 -3 tbsp. pickle relish
~ peppercorns and pepper
~patis (fish sauce)
~ sugar
~salt
~water
Procedure:
Saute onion, garlic. Put the chicken, cook for few minutes. Add carrots, potatoes and green bell pepper.
Add peppercorns.Add enough water. Pour in tomato sauce and pickle relish.
Season with salt or patis, pepper and sugar
Cover until veggies are cooked.
~to make my sauce thick, I mash some carrots and potatoes and pour it in.
Cook for several minutes until chicken is done.
